Heartburn free borsch

There are a lot of various recipes for Russian Borsch (Борщ). A lot of them involve heartburn causing ingredients like ketchup. The trick is to take away the problematic parts while still keeping it as much of a Borsch as possible.

Here is one recipe to try.

  • 1 large beet 600g fillet of beef
  • 75 ml of dry red wine (this one is slightly questionable, depending on your luck with tomatoes, wine can be replaced by fresh tomatoes)
  • 1 tbsp. vegetable oil
  • 1 carrot
  • Fresh greens (parsley)
  • salt and pepper

Instructions:

  1. Wash the beets and carrots, individually wrap them with foil and bake in the oven.
  2.  Cut the meat into small pieces and fry in a bit of oil over medium heat. Season with salt and pepper.
  3. Transfer the meat to the pot.
  4. Add the chopped parsley and wine.
  5.  Put it on low heat, cover and simmer for an hour.
  6.  Add a little boiling water.
  7.  Peel roasted beets and carrots, cut into small pieces, throw into the soup.
  8. Keep cooking for another 15-20 mins or until tastes good
