Here is one recipe to try.
- 1 large beet 600g fillet of beef
- 75 ml of dry red wine (this one is slightly questionable, depending on your luck with tomatoes, wine can be replaced by fresh tomatoes)
- 1 tbsp. vegetable oil
- 1 carrot
- Fresh greens (parsley)
- salt and pepper
Instructions:
- Wash the beets and carrots, individually wrap them with foil and bake in the oven.
- Cut the meat into small pieces and fry in a bit of oil over medium heat. Season with salt and pepper.
- Transfer the meat to the pot.
- Add the chopped parsley and wine.
- Put it on low heat, cover and simmer for an hour.
- Add a little boiling water.
- Peel roasted beets and carrots, cut into small pieces, throw into the soup.
- Keep cooking for another 15-20 mins or until tastes good
